Unicorners café, anticafé, Strada café in the latin quarter (I spent an afternoon applying to jobs and got 3 offers in the same day, the vibes are good there lol) Nuage in the 5th is super cozy!!!!

Close to the Pantheon there is Strada Café, where, if I remember correctly, you can be on your laptop on weekdays. Not sure it's still a thing, and don't know if there's a rule, but I remember going there and seeing people work.
